Refrigerator Bran Muffins


Refrigerator Bran Muffins (Makes 4-5 dozen)

1 c. oil
2 - 2 1/2 c. sugar
4 eggs
4 - 5 tsp. baking soda
2 c. boiling water
1 qt. buttermilk
5 c. sifted flour
1 Tbl. salt
2 c. 40% Bran Flakes
4 c. All-Bran

Cream oil & sugar thoroughly; add eggs and beat until fluffy. 

Dissolve soda in boiling water; add buttermilk. 

Add liquid to creamed mixture alternately with dry ingredients.  Mix just enough to blend; do not beat.  Store in refrigerator in covered container.  This will keep several weeks. 

Spoon into well-greased muffin pans.  Bake in preheated 425 degree oven for 15-20 minutes.

(These are a family favorite anytime but especially Christmas morning.)

  1. I can't tell you how happy this makes me. I told Travis that we will be having bran muffins and smoothies for breakfast for the next month. I'm pretty excited about it!
