Creamy White Chili
(This recipe, like many of my favorites originally came from Melskitchencafe.com)
1 lb chicken cut into small pieces
Medium onion
1 1/2 tsp garlic powder
1 Tbsp oil
2 can great northern beans, rinsed
14 oz chicken broth
1-2 cans chopped green chilies
1 tsp salt
1 tsp cumin
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1 c sour cream
1/2 c whipping cream (i use whole milk)
Cilantro- optional
Stove top: Saute chicken, onion, garlic, in oil until no longer pink. Add beans, chilies and seasonings and simmer 30 minutes. Remove from heat ans stir in dairy. add cilantro to top.
Crock pot: Add all ingredients (don't cut up chicken yet, and reduce broth to 1.5 cups) except dairy and cilantro. cook 5-7 hours or until chicken in cooked through. Shred chicken and add dairy and cilantro.
Hm. I wonder if--since you add the dairy at the end--I could just spoon some out for Lizzie before adding the sour cream and whole milk. It sounds yummy!
